This meal was only possible through my friend, Sophia. Awhile back I had a status on my gmail that read that I wanted a food processor, I was so careless for not having registered for one for my wedding (for those of you engaged women, don't forget to add it!). Fast forward a few months and I get an email from Sophia saying that she remembered I wanted a food processor and she had a new one that she didn't need anymore so she was looking to get rid of it. And before she asked anyone else, she asked me! That was the first shocker. I excitingly responded, YES please, how much? And she graciously said no charge! Cue second shocker. :) Sophia, thank you thank youuuuu! You reminded me of how graciousness is truly a blessing and gift.
I knew that the first thing I wanted to try and make with my new food processor was pesto. So I did.

The color wasn't as bright green as I had hoped. I learned that basil oxidizes like avocados and that adding spinach helps bring the bright green color. Something to keep in mind next time.
